miBoot works great for booting right into Linux- but make sure you
put a copy of resedit onto the miBoot partition, so that you can boot
off of Mac OS CD and run resedit to make changes to miBoot.

There's another alternative called quik, but I've never tried it.

Some Macs don't boot so well headless- but generally will if you have
a mac to vga adapter plugged in (wether or not a monitor is attached
to the adapter)
