Yes you can run Postscript printers on AppleTalk.
(not sure what a "Pro 630" is tho')
I am running an Apple Laserwriter IINTX on LocalTalk
connected via an AsanteTalk converter to Ethernet,
The package on YDL is 'netatalk' but the key
is the "filter" that intercepts files sent to 'lpr'
and redirects the traffic to AppleTalk.
Read 'man pap' and 'man psf' for an example and
edit /etc/printcap by hand per the example,

then
cd /etc/rc.d/init.d
./lpd stop
./atalk stop
./atalk start
./lpd start
and then try printing,

read 'man printcap' for how to install *any* printer.
'man atalkd' for all the Appletalk info.
Oh yes you will need the AppleTalk name of your printer
in .paprc and you might check /etc/atalk for your
net config info.
'man nbplkup' to see whats on the AppleTalk.
