I don't know of any mail servers that are LDAP based but I do know that
many of them can query an LDAP server for users and passwords.

Postfix has built-in LDAP integration, I'm sure you can make Sendmail do
it somehow but most - if not all - of them could be made to use LDAP (as
long as they use PAM) by using a PAM LDAP module:
