Your first choice most likely would be Mac-On-Linux, a fairly well featured
Mac OS runtime for Linux. It has it's issues, such as it requires a special
kernel (or kernel patch) to run on 603ev Macintoshes, and it doesn't support
serial ports (yet), it may require a ROM file for some Macs) or no support
for X Window Mode (it runs in a separate console -- usually #8 in Linux).

All and all, if you can live without serial ports support, this works great!

If you need serial port access or to run it in a Window check out Basilisk
II. It is a full featured Macintosh 68k emulator, so most things can run on
a 68k Macintosh will run well on this emulator. I was just playing with it
the other day, and was fairly impressed with the speed (after all it is
emulating a totally different processor). The downside of this is it
requires a ROM image from any 68k Macintosh except for 128, 512, Plus, SE,
PowerBook, Mac II, IIx, SE/30 and Powerbooks. All Mac Classic ROMs are
supported. A Quadra or a 32. ROM image works nicely -- you get full 32-bit
color, and the ability to run Mac OS 8.1.

Finally, a project similar to the WINE Win32-compatible APIs, is the Mace
project, which is a free implementation of Mac OS API. Still in early
development stages, it has trouble with many apps and simply doesn't work
good. See more about this in the future.
